300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar

Ingredients for the Drink (yields 850ml, serving 10)

A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Directions

For the Citrus Syrup: Place the listed components into a pan, heat until it reaches a gentle boil, stirring so the sugar melts. Then, turn off the burner allowing it to cool down entirely. Transfer into an sterilised bottle, cap it and refrigerate it chilled, it will last for about four weeks.

To make Premix: Pour all the liquids into one sizeable container, leave to sit for one hour, then strain , ideally through muslin, to ensure it's perfectly clear.

To serve: Measure 85ml from the cocktail base to a cocktail shaker packed with ice, and stir lightly for about 60 seconds to cool it down. Strain into a frosted cocktail glass or equivalent, top with the cranberries and finish by giving it a quick spritz with the mandarin essence above the glass.
